Received
a degree in economics from the University of Rome
and worked in Africa with NGO's and for the UN where
he specialized in International Cooperation and
Development.. Here he met his irish wife Eileen.
He resides in Dublin since 1995 where he started
to work in the restaurant business and to cook professionally.
The true love for his native italian cuisine come
from his grandmother Valentina. He recently opened
a restaurant in her homage in Portobello.
Many of the recipes came from Stefanos's art historian
uncle, who taught him to cook while he was a student
in Rome.
"Italian cuisine, for me, is more than research,
it's also a respect for tradition......"
He has also taught Italian cooking at various schools
in North and South Dublin.
